This isn’t my typical post but since we’re living, learning and adventuring together, I wanted to share one of my family’s favorite weekly meals! I love food that takes less than 5 min to prep before we leave for the barn, and when we come home it’s ready to go.
Fancy cooking isn’t really my thing. Recipes will not be posted often here and there won’t be exact measurements or professional pictures. I know this will drive some people crazy…apologies. I am just a busy mom here to help all the busy moms feed the fam on the go.
For a family of 4 this is what we use:
2 chicken breasts
Chicken broth OR water + 2 chicken bouillon cubes. I use enough to just barely cover the chicken which is around 1.5 cups
Pepper (I love fresh cracked pepper)
Optional but nice additions:
1/2 onion chopped
Salsa dumped on top. If I have cheap salsa I use a ton. If I have normal salsa it’s probably 1/3 cup. Here’s the final picture before I stirred it, put on the top and put it in the oven.
It’s important to note that I often literally throw 2 chicken breasts in the crockpot, dump some chicken broth on top, and turn it on low and am done. It still tastes great.
Cook times: if I’m home I put it in the oven for 2+ hours at 250. If I’m going to the barn I put it in the crockpot on low for the whole time I’m gone (4+ hours). The temps are low enough it would take a lot to overcook. When you’re ready to eat, shred the meat and throw it on your favorite taco or burrito shell with your toppings of choice!
